As with most aspects of the production process,
everything is done by hand - even down to the individual placement of the labels on the bottle, each painstakingly glued and
positioned by a careful eye.
With these old hands at work at Toshimaya in Tokyo, The reason why the Guardian(the producer of the SAKE) haven't chosen
to retire yet is they feel it is their duty to preserve this tradition for as long as possible, in hopes of a new generation of hands to take over.
Every one of these hands represent a guardian of a 1,000+ year old craft. Hopefully, we'll be able to see another 1,000 years of this continue.
